Today I’m going to greatly improve the quality of your life, just as my friend Jessi did for me when she gave me her oven roasted okra recipe last year. Obviously, fried okra is delicious. As is okra in gumbo. However, I’m not a huge fryer, and I rarely make gumbo, yet I have oodles of okra from our garden that I need to consume in some way, shape, or form. Enter, the easiest and most delicious way to cook okra. Ever.
Seriously, these are so yummy and roasting them really gets rid of the sliminess. They actually taste a lot like fried okra, which explains why we eat them at least every other day when we can get okra.
Oven Roasted Okra
Preheat the oven to 350 degrees.
Step 1: Wash and slice okra (same size slices as fried okra).
Step 2: Lightly drizzle with coconut oil* and toss to coat.
Step 3: Season with salt and pepper or burger seasoning.
Step 4: Lay flat on a cookie sheet.
Step 5: Bake for 15 minutes on one side, flip with a spatula and bake for 15 more minutes on the other side.
Let cool a bit and enjoy.
*The original recipes calls for olive oil, and it’s really good with olive oil. However, due to the smoke point of olive oil, I keep hearing that it’s best to use other oils when heating to high temperatures. So we now use coconut oil. They key is not using too much coconut oil- just a drizzle is enough, and then the spices cover the slight coconut flavor.
