Jessi’s Oven Roasted Okra

Today I’m going to greatly improve the quality of your life, just as my friend Jessi did for me when she gave me her oven roasted okra recipe last year. Obviously, fried okra is delicious. As is okra in gumbo. However, I’m not a huge fryer, and I rarely make gumbo, yet I have oodles of okra from our garden that I need to consume in some way, shape, or form. Enter, the easiest and most delicious way to cook okra. Ever.

Seriously, these are so yummy and roasting them really gets rid of the sliminess. They actually taste a lot like fried okra, which explains why we eat them at least every other day when we can get okra.

  2. I tried a recipe like this the other day, and it took A LOT longer than 30 minutes for the okra to look anywhere near done. I even had my oven on 400. The flavor was delicious after they were done though! I’ll definitely make them again.

    • Interesting Katie! We make this at least once a week, and for our oven 15 mins on each side is perfect. But we have literally the cheapest oven we could find at home depot, so maybe it cooks hot?!

  5. This sounds great! Most often, we just leave them whole and put them on the grill. We also love them in Shrimp Creole. Mmmm.
